The Kitchen
A small team, a clear philosophy.
Chef Elise Mertens opened this restaurant after a decade working in Copenhagen and Lyon. She returned to the Netherlands to cook Dutch produce with the technique and discipline she'd gathered — and to build something worth keeping.
The kitchen has eight cooks and no hierarchy beyond craft. Everyone butchers, everyone plates, everyone tastes.
Reservations
We seat 32 guests each evening. Reservations open 30 days ahead. Walk-ins welcome at the bar.
Private Dining
The private dining room seats 12 and can be hired exclusively. Fully bespoke menus available.
